Hey, all of you cooking friends, it's raspberry season and with the season comes rspberry pie. Mmmm, it's really good. So, I thought I would give you all a recipe for a "heavenly" pie. Here it is!
Raspberry Glaze Pie
1 quart berries
1 cup of Water
1 cup of Sugar
3 Tblsp. Cornstarch (or permaflo or something that jells)
1 - 3 oz. Cream Cheese.
Simmer 1 cup. of berries and 2/3 cup. of water for about 3 mins. Blend sugar, cornstarch and remaining 1/3 cup of water. Add to boiling mixture. Boil for 1 min. stirring constantly. Cool.
Spread cream cheese over the bottom of the cooled baked pie shell. *save 1/2 cup. of berries* Put remaining 2. 1/2 cups of berries in the pie crust shell and pour the jelled mixture over the berries. Arrange the saved 1/2 cup of berries over the pie. Refrigerate. Top with sweetened whip cream.

:D The pie was really good...we have made 3 this month. 2 for this weekend of Special Services, and 1 just for ourselves. :) You should really try it. And you don't have to have raspberries. You can use any kind of berry. e.g. strawberry, blueberry...etc.
So, try it out!!
